Blueberry Bread






Hi dears..... hope you all had a wonderful weekend. Here, still winter going on.... Now a days I don't have enough patience to make bread....waiting for yeast to be risen ...so I go for quick and easy breads. Another quick bread in my blog is whole wheat American biscuits.



I got the recipe for this Blueberry bread from  "Fabulous food The Costco way" and modified with our own personal preferences. Thank Lord! it came out well with an nice aroma which could fill the entire home...



Servings : 6 
Ingredients:

2 beaten eggs
1/3 cup + 1 tablespoon of melted butter
1 1/2 cups of all purpose flour
11/2 cups of fresh or frozen blue berries (I used frozen)
1/2 teaspoon salt
1 teaspoon baking powder
1 cup of sugar
1/2 cup of milk

Method:
Preheat your oven to 3500F. Grease an 8 by 4 inch loaf pan with butter.

Whisk together these dry ingredients - flour, salt and baking powder.

In a large mixing bowl, whisk together 1/3 cup of melted butter, sugar and eggs.

Fold in the dry ingredients to the egg mixture in three additions, alternately adding milk after each step of adding dry ingredients. This will help in loosening the batter . 

Add blueberries into the batter and gently fold in. Ensure that blueberries are almost uniformly distributed.

Pour the batter into the prepared loaf pan and bake for one hour till the toothpick inserted came out clean. (For me it took one hour and 10 minutes).

Cool it completely and remove it from the pan.



Note: 
You can store it in an airtight container, for 3 days at room temperature. In the same way, it could be kept in refrigerator for about one week.



This bread is so soft and moist. Anish told to bake blueberry bread more frequently. Let this blueberry bread sit on your table with a smiling face and whispering  "eat me". Enjoy your beautiful mornings or your evenings with a cuppa coffee or tea :-).
