Hi my dear ones......Hope you had a great weekend. Today I have a delicious snack recipe to share with you. After Uzhunnu vada (no baking powder) and diabetic friendly Oat meal crackers, this is another promising tea time snack.
One fine evening, we visited our cousin aunty and she had given us hot chicken spring rolls. It was simply awesome and she shared the recipe. On that very day itself, it came inside my mind to give it a try. Thank God! that "time" came now only as I was in a hibernation mode those days.........
Chicken spring rolls can be altered as veg spring rolls or any meat spring rolls as per your fillings, just like empanadas. First step is to prepare the filling and then do the pan cakes so that the spring rolls will be ready soon.
Minced Chicken:
Ingredients:
Boneless chicken- 1.35 lb (Cut into small pieces)
Garlic- 8 cloves (Finely chopped)
Ginger - 1 inch (Finely chopped)
Green chillies -2 (Finely chopped)
Red chilly Powder (Kashmiri)- 2 teaspoons
Coriander Powder - 4 teaspoons
Garam Masala- 1 teaspoon
Curry leaves - 2 Strands (Pick the leaves from the strand and chop it)
Onion - 1 (medium size ,Finely chopped)
Oil - 3 tablespoon
Salt - to taste
Method:
Heat oil a pan and saute onion, garlic, ginger, green chillies and curry leaves. When these ingredients are softened, add chilly powder, coriander powder, garam masala, salt and saute till the raw smell disappears.
Put the small chicken pieces into it and mix it well Close the lid of the pan and the cook it well in medium heat, sauting in between and check for enough salt. when the chicken is cooked . Turn off the flame and mince it properly using a mixer grinder.
Wrapper
Ingredients:
One cup of All purpose flour/ Maida
One tablespoon of corn flour
One large egg (lightly beaten)
Half cup of milk
Half cup of water (Increase or decrease as required)
Salt - to taste
Method:
Mix all the ingredients together without any lumps and make a thin batter.
Make pan cakes and keep three tablespoons of batter for the later use.
Method for making spring rolls:
Place minced chicken inside the pan cakes and roll it.
Stick the edges using the batter kept and tuck it inside.
Dip the rolls in the same batter, roll in bread crumbs and deep fry.
I made these for our teatime. For parties, make small pancakes, do the procedure mentioned above and serve hot as an appetizer. Everybody will enjoy this for sure :-)
