American Pancakes with Caramel Banana


One pretty morning, I made a dish which Anish and me have never eaten. It is the American pancake. We were familiar with the taste of caramel banana. The caramel banana is an excellent combination for pancakes.  The recipe has been adapted from Nigella Lawson's American Pancakes  It is simply amazing, which can be served for breakfast, brunch or at teatime.  The recipe is quite simpler to follow and can be made even in hurry burry.

Ingredients for Pancakes

300ml of milk
1/2 teaspoon of vanilla extract
1 tablespoon of baking powder
1 teaspoon of white vinegar
1 teaspoon granulated white sugar or powdered sugar
 A pinch of salt
2 large eggs
225 grams of plain flour
30 grams of melted butter
For frying some amount of butter or Olive oil.

Ingredients for Caramel banana

4 Ripe bananas sliced in round shape
4 tablespoon of sugar
50 gram of butter
2 tablespoon of hot water

Procedure for Pan cakes

Mix  all the dry ingredients together with a blender or with hand (If mixed up with the hand, in a bowl, make a well in the flour and add baking powder, salt and sugar)

Beat in the eggs, melted butter and milk and pour the batter into the bowl with dry ingredients and mix it well to avoid any lumps.

Heat a skillet on the stove and pour the batter into the skillet directly from the bowl or transfer the batter into a jug and then directly pour into the skillet .

Cook the pancakes and when  the upper side of the pancake is bubbling, cook the other side (Similar to Indian Dosa :-) )

Procedure for Caramel Banana

Caramelize the sugar and add butter stirring continuously and add the hot water (Never allow the caramel to get burnt which would give to a bitter  taste)

Put the bananas into the caramel syrup and cook for some time.

Now Pour the caramel banana over the pancakes and serve. Else, caramel banana can be used as a good dip for pancakes.




We all  had it and the dish got finished within no time :-)
