Oatmeal Crackers -Diabetic Friendly


Hi all. Today, there is something special  for  Atta (whole wheat)  and Oat lovers! Here, we have the heavy monsoon and I love the enchanting music of the heavy rain droplets. I like to be in home during rainy days enjoying the jingling rain with a cup of  black tea.



With the tea, a set of homemade biscuits is fine. When me and Anish  think of diabetic friendly food, we need to thank our dearest friend JithuChettan and his wife Simi who gave the idea of preparing diabetic friendly foods.

Ingredients:

100 gram multigrain atta (whole wheat)
A pinch of salt
100 gram oats
1 tablespoon sugar
1 teaspoon cinnamon powder
5 tablespoon extra virgin olive oil
Half Cup water

Procedure:

Mix all the ingredients together and make a dough and keep it rest for 30 minutes.

Preheat the oven to 175oC. Now Roll the dough thinly, similar to chapati and brush with a little olive oil on the top.

Using cookie cutters, cut into desired shapes and bake for 20 minutes until crisp and golden.
Cool and store in an airtight container.

Ready to put inside the oven !!



An easy way to bake cracker biscuit with oat meal is not a bad idea right? BBC's good food magazine provided me the source of recipe. A heart healthy, diabetic friendly one. I have not put much effort on building this crackers from the scratch.




It tastes definitely good than the store brought one's. It is crispy and crunchy.  But this is diabetic friendly so less sugar and a quality food. Those who like the taste of chapati or whole wheat would certainly love this healthy cracker biscuits :-)
