Coffee Cream Cake


Today, I have a coffee cream cake to share with you. Do you love coffee ? Of course  I  do. In my hostel memories, I could see coffee as a big  star. After the long long hours in the college, I used to run to the hostel canteen to have a cup of coffee.  And now, I have a big cuppa in the evening.

After doing the  Barbie Doll Cake, I came to know about the chocolate decorations.  From that time itself, it came into my desire list . I was waiting for a chance to do it and now itz the right time to decorate with chocolate. Coffee and chocolate are good pair, both of them blend well. I got the recipe from Deeba's blog, passionateaboutbaking.



Ingredients:

For the cake

1 Cup of all purpose flour
1 Cup of powdered sugar
4 Large eggs
1 tablespoon of good quality instant coffee powder
1/4 Cup of unsalted butter melted and cooled to room temperature
A pinch of salt (avoid if you have only salted butter )

Procedure:
Preheat your oven to 1900C and coat an 8 inch spring form cake tin with butter on the bottom and sides.

Beat the eggs and sugar  on high in a large bowl, placing the bowl above the simmering hot water for five minutes till thick .

Take the bowl away from water and again beat for five minutes till it cools. Now add coffee powder and continue beating for a minute.

Now gently fold the flour in three batches and mix well after each addition but do it carefully so that the batter is not deflated.

Pour a cup of batter into the melted and cooled butter and mix well. Gently fold this back to the rest of the batter and combine.

Transfer the batter to the prepared cake tin and bake for 30 minutes till the small knife inserted at the centre comes out clean.




Filling and Topping

3 tablespoon icing sugar (sifted)
300 ml whipping cream
1/2 teaspoon Vanilla essence
1 tablespoon coffee dissolved in 3 tablespoons of water with 1 tablespoon sugar.

Procedure:

Whip every ingredients together till stiff peaks form.

Subsequent to cake baking, cool the cake completely. With a sharp knife, carefully cut the cake into two equal halves and put one- third of the filling. Put the next half above and cover the sides and top with the whipping cream mixture.

Take  50 grams of dark chocolate, melt it and make  desired decorations.

And....most importantly, refrigerate well before use . This will add taste.



Rydhi had one big piece and Anish...took one piece, had it and again took more.. :-)  Enjoyed the taste of coffee cream cake. Grateful to God for making this attempt a success :-)
