How is your day...? There is an apple tree on the back of our condo. In the spring, I saw it ....ornamented with green apples....but now, not even a single leaf on it. I feel the tree overcome its dryness with the bliss of Christmas celebrations, cuddling of light rain and the kissing of light snow.
Today I'm sharing a Christmas drink with you. This is a perfect drink to be served in the Christmas morning. Normally eggnog is done with raw eggs but this recipe is a cooked egg version. This is a version of custard with the infused flavors such as cinnamon and nutmeg which makes the drink more delightful. This is my third drink post after strawberry pear smoothie and plum pomegranate juice.
Makes 2 glasses
Ingredients:
4 egg yolks
2 cups of milk
Half cup of sugar
One cup of heavy cream
Two pinches of ground cinnamon (for topping)
2 inch and 4 inch cinnamon stick
Half teaspoon of grated nutmeg
2 egg whites (optional)
Method:
Separate the egg yolks from the egg whites.
Beat the egg yolks for 3 minutes on high speed and add three- fourth of half cup sugar, till it is light and fluffy.
In a medium saucepan, on low flame heat milk, heavy cream nutmeg and half inch cinnamon stick, stirring continuously. (If you do not want to use raw egg whites, then add the remaining sugar into the milk)
When it comes to a just boil (do not allow it to boil), take the sauce pan out from the heat and temper the egg yolk mixture. While pouring hot milk, continue stirring the egg yolk to avoid lumps.
Now return everything to a medium low flame, again stirring continuously, till the custard thickens slightly for about 5 minutes.
Set in the refrigerator to chill for at least 4 hours.
When ready to serve, (if using raw egg whites doesn't matter you, then) whip the egg whites till soft peaks and gently fold into the custard mixture.
Note: Addition of 1/4 cup of light rum before chilling adds more flavor and taste to the eggnog. But I didn't use, still it tasted great. When served, remove the cinnamon sticks and nutmeg pieces.
