Soft and Thin Chocolate chip cookies






You might have heard and eaten chocolate chip cookies so often. For me, the inclusion of tiny chocolate chips in biscuits started from hide n seek biscuits...... It was the most demanded biscuits in those days...... 



I found this method so interesting and indeed a different version of chocolate chip cookies. It is almost cake like soft and crispy bottom. If you have an oven in your home and a little time to spare, definitely this is one of the best option for your tea time or any time biscuits for your kids. By God's grace this came out well and I got the recipe from here. This is the next cookie after cranberry orange biscotti.



Ingredients:
2 1/4 cups of all purpose flour
1 cup of softened butter
3/4 cup of packed brown sugar
3/4 cup of granulated white sugar
1 teaspoon of baking soda
1/2 teaspoon of salt
2 large eggs
2 tablespoon of light corn syrup
1 tablespoon vanilla
2 cups of semi sweet chocolate chips

Method:
Preheat your oven to 375 oF and prepare a rectangular baking tray with parchment paper (ungreased) or a silicon baking mat or cookie sheet.

In a large bowl, beat butter on medium speed for 30 seconds. Now add brown sugar, white sugar, baking soda and salt. Beat until the mixture is well combined, scraping the sides of the bowl occasionally.

Combine eggs, corn syrup, and vanilla and beat until they are well mixed.

Now add  flour and beat again, and then stir in the chocolate chips.

Drop 1 teaspoon of dough into the prepared tray and keep the next one 2 inches apart. If you are bothered about its shape, then with a spoon, gently shape it.

Bake for 7 to 9 minutes until the edges are browned. Let them stand on the tray for 1 minutes and then transfer them into wire rack. Cool completely and serve.



Note:
#You can freeze the dough in an almost log shape wrapped in cling. Simply cut it and bake it whenever you are ready to eat. It might take a little more baking time as the dough is freeze....
#For storage, keep in an airtight box.



I'm sure that for  those kids who are fond of chocolates would certainly grab more as I could see those little hands demanding more ....... Anish liked it very much and .... of course, me too...... :-)
