Hi everyone…. Having salads for a meal is healthy choice right….? When it comes to salad, the options are much wide where you can play well. You can add anything and everything in a salad. Other salad recipes posted in this blog are roasted grape tomato and baby potato salad and Indian style pomegranate raita.

Ingredients:
2 cups of pasta and 6 cups of water
A handful of (mix of) spinach, baby kale, chard leaves (chopped or whole)
Half of red bell pepper (chopped)
Salt to taste
10 crotons
Cream cheese dressing:
3 tablespoons of cream cheese (softened)
1 teaspoon of olive oil
1 teaspoon of black pepper powder (increased or decreased as per your spice requirement)
1 ½ teaspoon of Italian seasoning mix
Salt (If necessary)
Method:
Boil 6 cups of water with salt and cook pasta in it till al dente. Drain off excess water and wash in running cold water. Set aside.
Whip the cream cheese with a spoon. Drizzle olive oil and then add black pepper powder, Italian seasoning and salt. Mix them well. This is the cream cheese dressing.
In a salad plate or bowl, put pasta, crotons, red capsicum and leaves. Add the prepared cream cheese dressing, sprinkle some salt and give a through mix. Refrigerate for 10 minutes and serve.
Note:
You can add I tablespoon of mayonnaise for the cream cheese dressing and mix any flavoring of your choice. For homemade mayonnaise, click here.
